America the Beautiful. Soft and sultry. Not a dry eye in the house.
National Anthem. Powerful.
Now let's get ready to rumble.

Got a chuckle out of this!
Stuck in New York, itβs difficult to perfect the chili-not-chili beloved of Cincinnati natives like my husband
We definitely have plenty of canned Skyline in our lives, but the most fun comes when we cook it ourselves using one of these fun packets of goodness https://www.kroger.com/p/cincinnati-.../0007359103082. This also works great with venison when it's available.
Just finished our goetta breakfast!

"Scientifically Processed Animal Matter"
Not kidding. According to Google.
Meat from the pig's shoulder only which is considered high class. Devised for the war, marines took it to the Phillipines, South Korea and elsewhere. With little refrigeration. It was the only way to keep meat fresh.

Spam is considered a delicacy in some Asian countries. It actually has a good reputation for nutrition. It's not the abbatoir floor sweepings most people think.
In isolation recently I ate some for the first time in 40 years. Snacked off it straight from the tin in the fridge.
Until. It began to congeal a grey coloured crust and then and only then did it look unappetizing.
Spam. Not as bad as you think.

Don't get me wrong. Once and awhile I'll sit down
to eggs, bacon, sausage, mushrooms, tomatoes and toast. A slap up brekkie .
But if I had a load o' beef I'd probly need a nap afterwards.

The rest of the older generation of her family add zero spices and just a bit of salt so it's super bland pork mush to me. Fortunately Betsy is a spicy girl so it didn't take any convincing to get the job done right.

Of course the rest of the family gets their protein from Krogers, which is another Cincy company along with Procter & Gamble that y'all might have heard of, but we are lucky enough to get ours from https://www.theeatonfarm.com/ which is about 10 minutes from here.
